Add the vanilla extract and almond extract. Mix briefly until blended.

Step 4: Add Dry Ingredients

Gradually add the all-purpose flour and panko breadcrumbs.
Continue mixing on low speed until a soft dough forms.

Step 5: Shape the Cookies

Divide the dough into 10 equal portions.
Roll each portion into a ball, then flatten gently into a
1/2-inch thick disk. Place on the lined baking sheets, spacing them evenly.

Step 6: Bake

Bake the cookies for 15 minutes, rotating the tray halfway through.
The tops should remain pale while the bottoms turn lightly golden.

Step 7: Cool

Allow the cookies to cool on the baking tray for 10 minutes.
Then move them to a wire rack to cool completely.
